Here is one bean recipe that you’d surely enjoy. If you intend to use canned beans, check the label first and determine if it has a low sodium ingredient. Rinse the beans thoroughly before using them.
Chickpea Salad:
You will need a tin of chickpeas, an onion, tomato, black olives, basil, chilies (chopped) or chili flakes and 2 tablespoons of olive oil. To prepare, simply mix all the ingredients well and enjoy!
Lima Bean Hummus:
You will need a can of lima beans, 1/3 cup lemon juice, 1 to 2 cloves of minced garlic, 1/2 teaspoon of ground cumin, 1/4 cup finely minced parsley leaves, a tablespoon of paprika and salt.
Combine all the ingredients excluding parsley and process in a blender until juicy. Pour the mixture in a bowl and add the parsley leaves then refrigerate for a couple of hours. Garnish with paprika then serve with chopped vegetables.
